Every time I order Lebanese food for delivery they literally fill a plastic bag full of pita bread.
I don’t known if they do that because they look at the amount of food ordered and think I’m feeding an army of people … But I’m not.
Anyway, since I’m left with so much bread I decided to make some pita chips and hummus.
I love homemade hummus and pita chips. It’s so much better than the store kind.
Super Easy Homemade Hummus
1 can chickpeas
1 clove garlic
2-3 tablespoons olive oil
½ teaspoon salt
1 lemon, zested
1 lemon, juiced
1/4 cup water
Rinse the chickpeas until the water runs clear and reserve. Place chickpeas in a blender or food processor with garlic, olive oil, lemon juice and zest, ¼ cup water, salt and peper. Blend or puree until very smooth, adding the remaining water one tablespoon at a time if the mixture is too sticky to move through the blender. Once the mixture is going, you can stream in a little bit more olive oil to help achieve a super creamy texture.
Adjust seasonings as you like!
Homemade Pita Chips
1 bag of pita chips
Extra Virgin olive oil
Seasoning of your choice ( I use rosemary and olives)
Salt and pepper
Preheat the oven to 180. Cut the pita bread into triangles. Drizzle with olive oil and seasoning. Toss to make sure that every piece is coated evenly. Lay it as flat ad possible to insure even toasting. Bake for 15 -20, until desired crispness is achieved.
